I am always looking for new ways to prepare sausage. I regularly purchase ground sausage because it is so easy to prepare. They are already packed full of flavor, so usually the seasoning I add to sausage dishes is minimal. These include andouille, polish sausage, italian sausage (sweet and hot) and chorizo. Chorizo is what I chose for dinner tonight and it did not disappoint. I used a spanish chorizo , which has a smoky flavor. I am trying to use as much of my pantry items as I can without running to the store for last minute ingredients. So I had a ginormous pack of tortillas and a brand new brick of feta that we needed to use, so I put them all together for a great tasting meal. The feta cheese gave the tacos a bit of tang, which I loved. Added with the cilantro and it was a great , flavorful meal. I kept my tacos simple with just meat, feta and cilantro, but my family added salsa, guacamole and sour cream to theirs. I will definitley make these again and add on the base recipe in the future. Maybe black beans or roasted corn.
Chorizo Feta Tacos
1 lb chorizo sausage, casings removed
1/2 cup spanish onion, chopped
2-3 cloves garlic, chopped
1/2 cup feta cheese, crumbled
1/4 c cilantro, chopped
sour cream (optional)
guacamole (optional)
salsa (optional)
flour tortillas
In a medium skillet, add the chorizo sausage, chopped onion and chopped garlic. Cook om medium high heat until the sausage is cooked through. Drain the rendered fat and return to the skillet. Keep warm.
Warm the tortillas and add sausage , feta and cilantro.
