{Chocolate Peanut Butter Brownies in a Jar}



 
Here is yet another food in a jar recipe. I have blogged about these before and I love them as much now as I did then. With a house full of children I make cobblers, mini pies and brownies in individual jars quite often. They are easy to pop in lunchboxes, for after school snacks, and desserts after bath time. Clean up is just as easy. Just rinse out the jars and put them in the dishwasher. These super chocolate brownies are baked right in the jar, and when they have cooled, I whip up the frosting, add it to the jar and close them up. Pop them in the fridge and everyone can grab one when they feel so inclined. If you like it warmed a bit, just take the jar lid off and pop the jar in the microwave a few seconds. This is such a great idea to pack for picnics, and they are great to tuck into baskets for a new mom or meal basket that you are taking to a sick or recovering friend. If I am taking a meal to  a new mom or to a friend in need of a meal for one reason or another, I add some kind of these great desserts for her and her family to enjoy after their meal. You can add a piece of fabric to the jar or a cute label to personalize it.


Chocolate Brownies

  • 3/4 cup cocoa powder
  • 3/4 cup shortening
  • 2 1/4 cups sugar
  • 4 large eggs
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
 

Preheat oven to 350 degrees.
Grease 12 4 oz jars and place jars on a baking sheet.
Melt shortening in a large saucepan over low heat, then stir in cocoa.
Remove from heat.
Mix in sugar and vanilla then mix in eggs one at a time.
Stir in remaining ingredients until mixed through.
Place a heaping Tablespoon of brownie batter into each jar.
Bake for 12-15  minutes, or until the brownies are cooked through.
Let the brownies cool.
Place frosting on top of the brownies, just below the rim of the jar.
Place the lids on the jars.
refrigerate until ready to eat.

 
 

 
 
 

 

Peanut Butter Frosting

1/2 c butter, softened
3 T milk
2 c confectioner's sugar
1 c cramy peanut butter

In a mixer, add the butter and peanut butter and whip until the butter in incorporated. Add the confectioner's sugar a few tablespoons at  a time until smooth. If the frosting is too dry, add milk as needed. The frosting should have a spreading consistency.Use to top the brownies .
