This is an easy weeknight meal for the pierogie lover. You can find boxes of pierogies in the frozen section of grocery stores these days. They are coming in more and more ingredient combos, which is really cool because you can change this recipe up depending on the pierogie filling. Use different spices in the cream cheese mixture and cover the casserole with different cheeses. For the casserole I made, I used potato anaad onion pierogies , that way all would eat them. But I really want to try the feta ones . And maybe the sauerkraut ones and add diced kielbasa to the sauce. So many options that you can create. It literally took 10 minutes top to put together. I used microwave bacon, reduced fat cream cheese, low sodium chicken broth and it turned out so good. Very creamy and cheesy.
Baked Pierogie Casserole
Ingredients
16oz frozen pierogies ( I use potato & onion)
2-3 slices cooked bacon,crumbled1/3 cup cream cheese
1/2 cup chicken broth
1/2 tsp garlic powder
1/2 cup shredded cheddar cheesechopped green onions, optional
Directions
Preheat oven to 400 degrees. Lightly spray 13x9 baking dish with non stick cooking spray. Arrange frozen pierogis in dish. In a saucepan, mix cream cheese, garlic powder and chicken broth. Stir frequently until cheese is melted and smooth. Pour melted cream cheese mixture evenly over pierogis. Sprinkle evenly with cheddar cheese. Bake 20-25 minutes until cheese is bubbly and pierogis are warmed through.
Garnish cooked dish with crumbled bacon & chopped green onions
