This pie recipe is one that my family has been making for as long as I remember. My great aunt Ella contributed this recipe to the local church cookbook years ago, and I make this one when the first strawberries of the season come in. Makes me happy.
Strawberry Pie
(from Mount Auburn Church Cookbook)
1 pint strawberries, washed and capped
3 T strawberry jello
2 T cornstarch
1 c boiling water
3/4 c sugar
1 baked pie shell , 9 inch
Combine sugar, cornstarch and water in sauce pan:bring to a boil, stirring consrtantly until thick and clear. Add jello, stirring until dissolved. Cool completely.Place strawberries in pie shell and pour the filling over the starwberries. Chill and top with cool whip.
